Paleo Cranberry Walnut Almond Scones

Cranberry Walnut Scones
Serves:8
- 2 cups blanched almond flour (not almond meal)
- ½ teaspoon baking soda
- 1 large eggs
- 2 tablespoons coconut sugar
- 1 tablespoon orange zest
- ½ cup dried cranberries
- ½ cup walnuts chopped
Instructions
- In a food processor pulse together almond flour and baking soda
- Pulse in egg, coconut sugar, and orange zest
- Stir in cranberries and walnuts by hand
- Transfer dough to a parchment paper lined baking sheet
- Form dough into a large circle, 1-1½ inches thick
- Cut dough like a pizza, into 8 slices
- Using a metal baking spatula move slices apart, leaving 2 inches between
- Bake at 350° for 12-16 minutes until edges are browned
- Serve
Paleo Vegan Coconut Almond Date Blueberry Banana Bread
All the ingredients are in the name!
5 Ingredient Blueberry and Banana Bread
2 cups desiccated coconut
10 medjool dates, seeds removed
2 cups almond meal
1 ripe banana, peeled and quartered
1 cup blueberries (frozen is fine)
Preheat your oven to 175°C or 350°F.
Grease and line a loaf tin @8x4 with baking paper.
Place the coconut and dates into your processor and blend until the mixture is broken down and the dates are finely chopped.
Add the almond meal and banana and blend to combine. Gently stir through the blueberries.
Press the mixture firmly into your prepared tin and level the top. Bake the bread for 40 – 45 minutes or until looking lovely and golden. Remove the bread from the oven and leave to cool in the tin for 5- 10 minutes before gently transferring to a cooling rack to cool completely. Slice with a sharp knife. Serve. Eat and enjoy.

Tuscan Canellini Beans with Eggs and Fresh Chard, Dinner in a Flash
Don't want to go to the store again? What's in the garden? Tons of chard. The pantry? Canellini beans (my fave) and always eggs and onions on hand. Baker and Olive Tuscan Evoo. Done
Saute onions or shallots with chard stems in olive oil on medium low. Fill your saucepan with chopped chard and spray or drizzle with olive oil. Stir frequently till chard is done, about 10-15 minutes depending on your heat setting.
Move to one side, spray more olive oil, add 1 can of canellini beans, garlic salt and pepper, warm thoroughly and drizzle with Tuscan Evoo.
Fry as many eggs as desired. Plate it all and grate your fave tangy cheese on top.
You're done.

Chili with Sausage, Roasted Corn and Peppers, Dinners in a Flash
1 pkg Jimmy Dean Hot Sausage, cut into chunks and brown lightly in a fry pan. Turn off when done and put in the larger pot after the onions/garlic are done.
Saute in a large soup pot few tablespoons of olive oil for about 10-15 minutes over medium low heat.
3 medium red onions
5-7 garlic cloves
Add:
TJ frozen bag of bell peppers
1/2 bag frozen spinach
1/2 bag frozen roasted TJ corn
3-4 cups TJ organic chicken broth
1 jar of Bertoli organic olive oil, basil and garlic tomato sauce
2 cans cannelli beans
1 can red kidney beans
1 can Bush's original baked beans
....don't forget the sausage!
Add seasonings to taste, start small as it blooms the longer it cooks. What you think isn't enough after you put it in might be spicy after 15 minutes. I'll list the spices low and you can adjust. I've included photos of the spices and tomato sauce to make it easier.
1 tsp garlic salt
1 tsp ground pepper
1 tsp smoked paprika
1 tsp Slap Ya Mama "hot"
1 tsp Slap Ya Mama "white pepper blend"
1 tsp chipotle chili pepper
Heat to let everything meld, at least 20 minutes after everything is in. Happy New Year!
